As in any self-respecting sandwich, the bread as a container and frame. The bread that we bring to the Market
Central is done in collaboration with David Bedu: in baskets, white or five grains, made with yeast
and without lard. The combinations are 10, from the most traditional to the specially designed and daily
for the market. Salads, carpaccio and soups, as the cocktails and centrifuges change depending on the season
and the freshness of the ingredients, chosen with care and – like salmon – processed directly by Lorenzo
in the laboratory.
